Chocolate Chip Cookie Dough Cupcakes

Chocolate chip cookie dough in the middle of a fluffy little cupcake, topped with browned butter frosting and a mini chocolate chip cookie. Enjoy!


Ingredients:
Cookie Dough
2 sticks softened butter
¾ cup sugar
¾ cup brown sugar
4 Tbs milk
1 Tbs vanilla
2½ cups all purpose flour
¼ tsp salt
1 cup mini chocolate chips (more for garnish)
Cake
1½ cups flour
1 cup sugar
2 tsp baking powder
½ tsp salt
½ cup shortening
⅔ cup milk
1 tsp vanilla
2 eggs
Frosting
½ cup butter
2 cups powdered sugar
2-4 Tbs milk
1 tsp vanilla
pinch of salt
Directions:
For cookie dough combine the butter and sugars in a mixing bowl and cream until light and fluffy. Beat in milk and vanilla until incorporated and smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Roll dough into small balls.
For cake heat oven to 350˚F. Mix together flour, sugar, baking powder, and salt. Add shortening and mix until evenly distributed. Add half the milk and beat for about 2 minutes. Add remaining milk, eggs, and vanilla. Beat for 2 minutes. Fill cupcake papers about ⅔ full. Place a cookie dough ball on top of each cupcakes and cover slightly with a bit of batter. Bake for 8-10 minutes. While cupcakes are cooling, bake the rest of the cookie dough balls for 4-6 minutes, let them cool on a rack to be used for garnish later.
For frosting brown butter in a pan. In a mixer combine browned butter, 1 cup powdered sugar, vanilla, and salt. Add milk and the rest of the powdered sugar until spreading consistency. Decorate as you'd like.
