Chocolate Cupcakes with Cream Cheese Frosting

One of the best combinations! Chocolate cake and cream cheese frosting. Easy to make and super delicious. Happy Birthday Dad :) Enjoy!


Ingredients:
Cake
2 cups sugar
1¾ cups flour
¾ cocoa
1½ tsp baking powder
1½ tsp salt
2 eggs
1 cup milk
½ cups vegetable oil
2 tsp vanilla
1 cup hot coffee
Frosting
8 oz cream cheese
¼ cup butter
1 tsp vanilla
About 4 cups of powdered sugar


Directions:
Heat oven to 350˚F. Mix together sugar, flour, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium for about 2 minutes. Stir in coffee. The batter should be thin. Fill cupcake papers about ⅔ full and bake for 8-10 minutes. 
For frosting beat cream cheese and butter until combined. Then add vanilla and beat well. Gradually add powdered sugar until spreading consistency.
Frost each cupcake and top with sprinkles :)
