Lemon Squares

The perfect lemon square recipe :) Really easy to make and absolutely delicious. Enjoy!


Ingredients:
Crust
1 cup flour
⅓ cup powdered sugar
2 tbs cornstarch
¼ tsp salt
7 tbs butter
Filling
1 cup sugar
3 eggs
3 tbs flour
1 pinch salt
1 tsp lemon zest
½ lemon juice

Directions:

Heat oven to 350˚F. Prep an 8 inch pan by covering the bottom with parchment paper and lightly spraying with non-stick spray.
For the crust combine flour, powdered sugar, cornstarch, and salt in a mixing bowl on a low speed. Add the butter (cut up into 12 pieces) and mix on low until ingredients come together and resemble coarse meal. Sprinkle at the bottom of the pan and press down with your fingers to create an even layer. Set the pan in the freezer for 15 minutes, then bake in the oven for about 20 minutes or until golden brown. While the crust is baking prepare the filling.
For the filling whisk together sugar and eggs until well mixed. Add flour and salt and whisk until smooth. Finally whisk in lemon zest and juice and set aside. 
When the crust is out of the oven turn down the heat to 300˚F, pour filling into the crust, and bake for 20 minutes (or until set in the middle). Dust with powdered sugar and serve cut into squares.
