Cheese Burger Cupcakes



These cupcakes are a bit time consuming because of all the different parts, but definitely worth it! Cupcakes, brownies, coconut, Starbursts®, and Twizzlers® for decoration :) Enjoy! 


Ingredients:

Cupcakes
cups flour
1 cup sugar
2 tsp baking powder
½ tsp salt
½ cup shortening
cup milk
1 tsp vanilla
2 eggs 
1 box fudge brownie mix
Decorations
12 orange Starbursts®
2 cups coconut
green food color
1 tsp honey
1 tsp water
2 tbs sesame seeds

Directions:
Heat oven to 350˚F. Mix together flour, sugar, baking powder, and salt. Add shortening and mix until evenly distributed. Add half milk and beat for about 2 minutes. Add remaining milk, eggs, and vanilla. Beat for 2 minutes. Do not use cupcake papers. Take squares of parchment paper and fit into each cup in your cupcake tin. Fill about ⅔ full and bake for 8-10 minutes. Unwrap cupcakes and let cool. 
Bake a thin pan of fudge brownies, then with a round cookie cutter, cut out 20 brownie patties. Make a quick frosting made of powdered sugar and half and half (to use as glue). Unwrap Starbursts. One at a time place them in the microwave for only 5 seconds. Roll out flat and cut a square point to resemble cheese. Place coconut in a zip lock bag and enough food color to achieve desired color, and shake until coated. In a small bowl mix together honey and water, set aside. Cut each cupcake in half place a small amount of frosting and secure a brownie, next spread more frosting and place a flattened Starburst on top (the pointed edge hanging over a bit), next spread more frosting and place some green coconut on top, then secure the top of the cupcake. Brush the top of each cupcake with the honey-water mixture and sprinkle a few sesame seeds on each "burger". Stick a toothpick in each to secure all the parts together even more.
