Simple Cupcakes (perfect chocolate frosting)

These cupcakes don't look like much, just plain yellow cake and chocolate frosting, but they are no doubt my all time favorite! Its made with sour cream instead of milk so its more creamy than regular frosting. In my opinion its perfect :) Enjoy!


Ingredients:
Cupcakes
1½ cups flour
1 cup sugar
2 tsp baking powder
½ tsp salt
½ cup shortening
⅔ cup milk
1 tsp vanilla
2 eggs 
Frosting
½ cup butter
⅔ cup cocoa
3 cups powdered sugar
⅓ cup sour cream
1 tsp vanilla

Directions: 

Heat oven to 350˚F. Mix together flour, sugar, baking powder, and salt. Add shortening and mix until evenly distributed. Add half milk and beat for about 2 minutes. Add remaining milk, eggs, and vanilla. Beat for 2 minutes. Fill cupcake papers about ⅔ full and bake for 8-10 minutes. 
For frosting, melt butter and stir in cocoa. Alternately add powdered sugar and sour cream beating until spreading consistency. Stir in vanilla. 
Frost each cupcake. Decorate with sprinkles.
