Another one of my favorite cakes! This frosting is a little difficult because its quick hardening, it won't be perfect the first few times. It takes practice, but its always delicious. It can also be used in the middle of a layered cake. Especially good when its warm on a cold day :) Enjoy!
Ingredients:
Cake
2 cups sugar
1¾ cups flour
¾ cocoa
1½ tsp baking powder
1½ tsp salt
2 eggs
1 cup milk
½ cups vegetable oil
2 tsp vanilla
1 cup hot coffee
Frosting
2 cups sugar
¼ cup light corn syrup
½ cup milk
½ cup shortening
¼ cup cocoa
¼ tsp salt
1 tsp vanilla
Directions:
Heat oven to 350˚F. Mix together sugar, flour, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium for about 2 minutes. Stir in coffee. The batter should be thin. Pour batter into a 9x13 inch pan. Bake for 30-35 minutes.
Mix all frosting ingredients except vanilla. Cook over low heat stirring constantly until shortening and cocoa melt. Bring to a full rolling boil. Stir constantly and boil for 3-4 minutes. Remove from heat, stir in vanilla and mix until spreading consistency. Immediately (and quickly) pour into cake and spread out.
