Reese's Cupcakes


Your favorite candy flavored cupcakes :) Happy Birthday Sam! Enjoy!


Ingredients:
Cake
  • 1½ cups unsalted butter
  • ¾ cup cocoa 
  • ½ cup boiling water
  • 2¼ cups sugar
  • 1 tbs vanilla
  • 4 large eggs, lightly beaten
  • 3 cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup milk
  • Frosting
6 tbs butter
¾ cup smooth peanut butter
¾ cup powdered sugar
¼ half and half
½ tsp vanilla
+ 1 pinch of salt

Directions:
Heat oven to 350 degrees. Sift cocoa into a medium bowl, and whisk in boiling water. Set aside to cool.
In the bowl of an electric mixer fitted with the paddle attachment, cream butter on low speed until light and fluffy. Gradually beat in sugar until light and fluffy, 3 to 4 minutes, scraping down sides twice. Beat in vanilla. Drizzle in eggs, a little at a time, beating well between each addition, scraping down the sides twice.
In a large bowl, sift together flour, baking soda, and salt. Whisk milk into reserved cocoa mixture. With mixer on low speed, alternately add flour and cocoa mixtures to the batter, a little of each at a time, starting and ending with flour mixture. Fill cupcake papers about ⅔ full and bake for 8-10 minutes. 

Beat butter, peanut butter, powdered sugar, vanilla and salt. Slowly drizzle in half and half until spreading consistency. Frost each cupcake and top with a mini Reese's.
